31 Day Blogging Challenge Day 1: Introduction 

I saw this thing on Pinterest about a 31 Day Blogging Challenge and it sounded fun. This would have been a fun thing to start on New Year’s Day but I did not see it till this week. So today is Day 1. At the end I will post the picture of the 31 Day Blogging Challenge but until then I want to keep it a secret what the topic for each day is going to be. I hope you enjoy it, I think it will be fun! 

Food Week: Fiesta Ranch Dip

My contribution to dip day was Fiesta Ranch Dip (http://www.sweetlittlebluebird.com/2014/01/fiesta-ranch-dip.html).  Let me first start off by saying, this dip could get addicting.  It is so good!  I first saw this on Pinterest, and boy am I glad I did.  The best part about this recipe is there is only 4 ingredients and all you do is mix them together.  I doubled mine since we have a lot of people that work in the lab.  I also switched it up a little to cut down on some of the spice.  The recipe calls for one can of Rotel drained and 1 packet Fiesta Ranch Dip Mix, plus sour cream and cheddar cheese.  When I doubled mine I used 1 can of original Rotel and 1 can of Mild Rotel.  I also used 1 packet of Fiesta Ranch Dip Mix and 1 packet regular Ranch Dip Mix.  I thought it was the perfect mix, not too spicy but not too mild.  I would love to try this on Tacos; somebody at work said a baked potato.  This dip has possibilities.  Now for me, I don’t like sour cream usually but in here I do.

Pinterest Cake Baking Tip

One of the first things I ever pinned on Pinterest was a recipe on how to make a cake mix taste like a bakery cake.  The directions were to add one more egg, use milk instead of water and to use melted butter instead of oil but double it.  So if the box calls for 3 large eggs, 1 cup water, and 1/3 cup oil you would use 4 large eggs, 1 cup milk, and 2/3 cups melted butter.  I have made cakes this way a few times now and they really are better.  The last one I made was Super Bowl Sunday and that cake was gone before the end of half time and we started serving at half time!  Everyone loved it and raved about how moist it was.  I have only tried it with chocolate cake mix but I’m going to make a red velvet cake friday for work for Valentine’s Day and I’m going to try it with the red velvet cake mix.  I hope it makes the red velvet cake even better.  I am a sucker for a good piece of red velvet cake.

Refrigerator Oatmeal


I’ve seen this on Pinterest and thought I would give it a try.  Now I used instant oatmeal because that was all I had, but all the recipes I found said not to use instant oatmeal.  I thought it was really good with the instant oatmeal so I’m not sure if I will try it with regular oatmeal.  Last night I used Kroger Active Lifestyle Raisin, Apple, and Walnut Oatmeal.  Tonight I think I am going to try Strawberries and Cream.  Here is how I made it…

1/2 Silk Almond Milk

1/2 cup or 1 packet of oatmeal

1 Meijer Greek Plain Non-fat Yogurt

I mixed everything together and let it sit overnight and ate cold this morning.

I found it to be good hopefully you will too if you try it.
