If you live in the south you have probably heard of Duke’s Mayo. I first saw Duke’s in a store in the Outer Banks a few years ago. Well it starting to make its way to my part of Kentucky and they have been advertising the crap out of it. One of the commerical’s they show is for a chocolate cake made with Duke’s. I had someone request one. So I thought I would try it out on my co-workers first. Oh my gosh! It is wonderful. It is so moist and rich. It might be my go to chocolate cake recipe now. I have made it three times now. I have made it twice with chocolate icing and once with peanut butter icing. Personally I think the chocolate icing is better but the peanut butter was good too. One of the first things I ever pinned on Pinterest was a recipe on how to make a cake mix taste like a bakery cake. The directions were to add one more egg, use milk instead of water and to use melted butter instead of oil but double it. So if the box calls for 3 large eggs, 1 cup water, and 1/3 cup oil you would use 4 large eggs, 1 cup milk, and 2/3 cups melted butter. I have made cakes this way a few times now and they really are better. The last one I made was Super Bowl Sunday and that cake was gone before the end of half time and we started serving at half time! Everyone loved it and raved about how moist it was. I have only tried it with chocolate cake mix but I’m going to make a red velvet cake friday for work for Valentine’s Day and I’m going to try it with the red velvet cake mix. I hope it makes the red velvet cake even better. I am a sucker for a good piece of red velvet cake.
Tuesday night I made a cake to take to work on Wednesday to celebrate someone’s Birthday. The store did not have the kind of pudding I was looking for, so I could not make the cake I was setting out to make. Which means I had to improvise, I bought a chocolate cake mix, two boxes of butterscotch pudding, one container of extra creamy whip cream, and a bag of chocolate chips. What I ended up with was a Chocolate Butterscotch Poke Cake, and they loved it! A few people told me it was one of the best cakes I ever made.
Here is how I made it…
1) I made the chocolate cake how it said to on the package
2) After it was done and cooled I poked holes in the cake with a wooden spoon (or in my case a plastic spoon that is just like a wooden spoon)
3) I mixed the two boxes of butterscotch pudding with 4 cups milk and then poured over the cake.
4) I let the cake sit overnight in the fridge
5) In the morning I put the whip cream on top, as an icing
6) Then I sprinkled about half of the bag of chocolate chips on top of the cake.
