I realized something the other week; I have let the things that make me, me slip away for a while and its time to get back to them. I have let my writing and my photography take a back burner but that is about to change. I love taking pictures and sharing them with people and I love seeing my words take form on screen. Another thing I have let go to the back burner too is my baking. I need to find my grove there again too. I miss these things that make me, me. Starting today I am going to focus more time on me and making me happy.
I know my post have been few and far between lately. Well I am hoping to change that. I am officially a one job woman now and I even got a promotion. So my new full time second job is going to be this blog here. So I am going to do a little catching up…
Travel: Well we went to Gatlinburg/Pigeon Forge for a few days in April. The day we arrived down there was the day the helicopter crashed killing five people. My heart goes out to those affected by the crash. We are getting ready to go to Grand Rapids, MI for a few days here very soon. We have done two Cumberland Falls’ weekends with the kids. Now those were a ball. Well the first one was a ball, the second one the babies were sick so it was not as much fun. But of course our big trip this year is still to come. I’m going to Disney World! Yes again! This is a family trip in October where my three favorite people under the age of eight will be going too. I can’t wait to see how the one and two year old reacts when they see it for the first time.
Baking/Cooking: Well this Southern Belle finally had one of her dreams come true. I got my KitchenAid Stand Mixer for Christmas so I have become the cake from scratch queen. I love it! Some days I will just look at it and think I am so lucky to have it. Cooking on the other hand I have not done too much of that.
Reading: Since late last year I have been obsessed with the Dare Valley Series of Books by Ava Miles and then the Dare River Series and now the Dare Valley Meets Paris novellas. I can’t wait for the next Dare River now. I also read the newest Catherine Bybee book, “Doing it Over”, plus the fourth book in the In Dixie Series by Beth Albright, “Stardust in Dixie”, and then there was the final in the Crossfire Series by Sylvia Day, “One With You”. Boy I really am into series! I loved all those books though.
Auntie: Beside the two trips to Cumberland Falls with the kids, I took the seven year old a girl’s day one day when I was off. We went to the local butterfly show, that was my first time going in years, I don’t think she liked it too much but I did. We also recently as a whole family did the horse park in Lexington, that was cool but I think the two year old how the most fun of any of us. The one year old was scared of the horse but she did well. Of course the hardest part right now for this Auntie is not being able to tell the seven year old we are going to Disney in October, her mommy doesn’t want to tell her till we are getting in the car to leave.
Southern Belle Style: I love saying shirts. One of my newest ones I purchased especially for the seven year old “Suck it up Buttercup”. I always want to tell her that when she starts whining about something.

This week so far nothing has been cooking. With just getting back from vacation I have been to the store yet. I should make some lemon bars this week and I want to make some jerk pulled pork, but those may have to wait till Sunday. I need a vacation from my vacation. Hopefully next week I will get back to cooking.
This week I have done no cooking but next week I will be. Next week is National Lab Week and since I work in a medical lab we are celebrating Lab Week. And since I am on the planning committee and I know already what we have in store for next week. One of the things we are doing is a baking contest. So I will have to bake something for that, I just haven’t quite figured out what it will be yet. I will keep you posted on what I finally decide on, how it turned out, and how I did in the contest.
This week two of the ladies at work have a Birthday so today was “food day”. Since there were two birthdays and two different tastes I made two things and took them in. I made a Carmel Tres Leches Cake and Almond Cheesecake Bars. The Tres Leches Cake recipe I got off of Duncan Hines’ website and the Cheesecake Bars recipe I got off of Taste of Home’s website. The people at work loved them! Personally I thought the cheesecake bars could have used a little more almond taste and I think some raspberry flavor of some kind could have helped too. I was hoping the caramel iced tres leches cake would taste like a bull’s-eye candy. Since I am not a big fan of caramel myself I don’t really have a thought on how it tasted or what it needed. It was really nice to bake two things last night to take in today. I love baking, I find it my stress reliever and I haven’t taken the time to really do it in a while now. It felt good, I miss it and I should make more time for my baking.

I love NASCAR! I have a few favorite drives. My favorite vacation spot is the Outer Banks of NC, my second favorite vacation spot is Rapid City, SD. I know two totally different ends of the spectrum. I love to read! “Gone With the Wind” is my favorite book and one of my favorite movies. “Seven Brides for Seven Brothers” maybe my favorite movie though. My other favorite kinds of books include Romance and Christian Fiction. I love to bake! And I am starting to dive into the world of cooking a little bit more. It seems as of late I have started a Cookbook Collection. I love dogs and in fact of two of them.
