This past year I did not watch the show Nashville. Mainly because it is on at the same time as Criminal Minds and well I can’t miss my Criminal Minds. Well this summer I have been catching up on Season 1 of Nashville. I am watching episode 12 right now as we speak and I am loving this show so far. I can’t wait to get home from work each day so I can watch more. I will be ready for Season 2 when it starts this fall. I will still be watching Criminal Minds on Wednesday nights but I will catch up on Nashville the next day. September can’t get here fast enough!
This week I finished book two in the Crossfire Series. Wow, these are totally different from Fifty Shades of Gray! Don’t get me wrong, I have enjoyed reading both series so far. And they both are great in their own way. Book One of Fifty was almost a little too much for me but Books Two and Three were perfect and my favorites. The Crossfire Series seems to be pretty much even throughout the series, what you get in book one continues in book two and I would assume book three as well. Don’t get me wrong I like that. I will keep you posted after I finish book three.
Well I have nothing cooking this week. I want to make some chicken noodle soup sometime soon but is not going to happen this week. I’m hoping to find a chicken noddle soup recipe that is healthy or at least somewhat healthy and that tastes like the chicken soup at Carrabba’s. Hopefully I can find something. I’m not a big Carrabba’s fan but I do like their chicken soup. Wish me luck! And I will keep you posted.
I don’t usually listen to the radio, I prefer books on cd when I am driving to and from work. The only time I have the radio on in my car is if I have someone riding with me. But there is a song on country radio right now I can’t get enough of. In fact I can’t get enough of the music video either. I’m sure you are wondering what song I am talking about. It is “Redneck Crazy” by Tyler Farr. There is something about that song and his voice that has just drawn me in. I can’t wait for October 15th for his cd to come out. I can’t wait to listen to it for the first time and to hear his voice on different types of songs.
My funk has returned! I don’t know why but my reading funk is back. I so want to sit down and get lost in a good book, but I have not been able to do that . I miss having a book you can’t put down and you stay up half the night reading, even though you have to get up and go to work in a few short hours. None of the books I pick up lately do that for me. I wish I could find one and soon! Is summer, beach read time! I’m not going to the beach but I would love a good beach read. Hopefully I find something soon.
Southern Belle Creamy Vegetable Soup
2 cans vegetable broth
2 cans water
2-3 large potatoes peeled and cut into pieces
2-3 carrots peeled and cut into pieces
1 1/2 to 2 cups frozen green beans
1 1/2 to 2 cups frozen cut cauliflower
salt and pepper to taste
2 cups fat-free half and half
1) heat a small about of olive oil in pan (2 to 3 tablespoons)
2) add the onion and chopped garlic
3) once the onion has started to cook add the 2 cans of vegetable broth and 2 cans of water
4) let broth and water mixture heat up
5) add cut up carrots and potatoes
6) cover and let that cook for 30 mins
7) after 30 mins add the green beans
8) cover again and let cook for another 30 mins
9) after 30 mins add the cauliflower
10) cover again and let cook for about 20 mins
11) after 2o mins check the texture of the vegetables, if they are done, turn the heat off and let them cool a little
12) after the broth and vegetables have cooled a little, separate the vegetables from the broth, keep the broth
13) add the vegetables to a food processor with some of the broth and puree
14) after the vegetables are purred add them back to the pan with the broth add the half and half and salt and pepper and heat back up
Yesterday afternoon in New Hampshire a man who has been through hell and back, or at least it seems, surprised thousands. Brian Vickers won the New Hampshire race yesterday. That’s right I said Brian Vickers won the NASCAR Sprint Cup race yesterday! Vickers does not even have a full-time ride. Yesterday he was racing the number 55 car for Michael Waltrip Racing. A few years ago it was unsure if Vickers would be able to ever race again after a health issue side-lined him. In fact it could have even killed him, so his winning yesterday was a great ending to a long story. Maybe this will mean Vickers can find a full-time ride for next year. Congratulations Brian Vickers!
I don’t usually read mystery books but last week I read “Our Husband” by Stephanie Bond. It was a really good book. It is labeled as a Romantic Mystery and maybe that is why I liked it since I love a good romance. It is about three women that learn they have married the same man as he is dying in the hospital. To top it all off an autopsy confirms he was murdered and the three wives have to work together to find who killed him before one or all go down for his murder. Again not my normal type of book but one I really enjoyed. I would recommend this book.
Sorry this is a few days late, but I did part of that on purpose. Friday was food day at work for our July Birthday. So I wanted to share with you everything I made. I made three things Black Bean and Corn Salsa, Edamame Hummus, and a Weight Watchers approved cake.
First Black Bean and Corn Salsa. This is one of my favorite things! I found this recipe a few years ago when I did a Google search for black bean salsa, I don’t really remember what website I found it from and I have made is so much I can remember the recipe by heart.
1 Can Rotel Tomatoes drained’
1 Can Corn (I think summer crisp corn works the best) drained
1 Can Black Beans rinsed and drained
1/2 to 1 red onion (depending on the size of the onion)
Juice of 1 lime
A little cilantro for taste
Mix everything together and let sit at least over night.
Second Edamame Hummus. I found this recipe in an e-book I purchased not too long ago titled “50 Delicious Snacks That Won’t Wreck Your Diet”. I’m not a big fan of hummus so this was a nice alternative to original hummus.
2 cups Edamame Boiled for at lest three minutes
About 6 Tablespoons Olive Oil
2-3 Cloves Crushed Garlic
A Dash of Salt
A little Paprika for taste
A little Cayenne Pepper for taste
Put everything in a food processor and combine until smoothly blended and has the hummus texture.
Third Weight Watchers Approved Cake. I found this recipe by doing a Google search and there were many different websites with the same recipe so I’m not real sure which one I got it off of.
1 Cake Mix Any Flavor (I used Devil’s Food)
12 oz. Diet Soda Any Flavor (I used Diet Cherry)
Mix cake mix and soda together and bake like directions say. I put cool whip out with my cake but it was just as good with nothing at all.
I love Vera Bradley! Everyone that knows me knows this. I’m always caring a Vera Bradley bag. In fact every day I have a least ten pieces of Vera Bradley with me at one time. When we went to Disney World I took about 25 pieces with me. This past weekend when we went away for a couple of nights I had a least 15 pieces with me. When I found out that come fall the Disney Parks are going to start selling Mickey and Minnie Vera Bradley bags I was overly excited. Two of my favorite things rolled into one.! I can’t wait to either order one on-line or get one next year if/when I go back to Disney World. So when I found out there is a Vera Bradley Outlet Store in the newly reopened Opry Mills Mall in Nashville, I was a little excited. After all Nashville is one of our favorite places to travel for a weekend getaway. Well this past weekend that is where we went to get away, Nashville! The only thing I had on my list was to hit three stores in the mall; Disney, Vera, and Bass Pro. I know that is a strange list but that is where this Southern Belle wanted to shop at. Disney and Vera because well as you can tell I love Disney and I am obsessed with Vera Bradley Bags. Bass Pro because I wanted to see what kind of Duck Commander/Duck Dynasty stuff they had. Getting back on track now. On Saturday I made it to the Vera Bradley Outlet. Well I am not going to lie I was a little disappointed with it. The prices were okay and they were having a great sale but I think I do better purchasing from the on-line outlet. I did purchase a few things, and for the few things I did purchase I had to wait about a half hour in line in an extremely hot store, I was about to pass out by the time I got to the register. If I was purchasing on-line I could have done it in my PJ’s and with the AC freezing me out! In fact I was very disappointed with the whole mall, if I ever go back to that mall it will be too soon!
