Southern Belle Cooks Wednesday: What’s Not Cooking This Week

I started the week out with the attention of making two new recipes for lunch this week.  That went out the door very quickly.  I was going to make Creamy Bacon Fettuccine and Baked Penne.  I even purchased all the ingredients needed to make them.  The fettuccine recipe I found on Kraft’s website and the penne recipe I saw on Pinterest.  Lately I am “pinning it up” on Pintrest with recipes I want to try.  I am really starting to like packing my lunch, it gives me a reason to try new recipes.  Next week I am going to be better and make something to take for lunch everyday.  Check back next week and I will keep you posted on what I made and how it was.

Southern Belle NASCAR Monday: Sparks Flying in California

Tempers were flaring Sunday afternoon in California. In the final laps of Sunday’s race Denny Hamlin and Joey Logano found themselves battling each other for the win, and last week’s feud had to be in the back of their minds. Bumping and banging off of each other got the best of them while coming around to take the checkered flag. Logano hit the outside wall while Hamlin hit the inside wall, hard, requiring him to spend a couple nights in a California hospital. While they were wrecking Kyle Busch took the lead and the checkered flag while Dale Earnhardt Jr squeaked out a second place finish, and surprisingly Logano finished third. For a second week in a row after the race Logano had a fellow driver come after him. This time it was Tony Stewart. And in his after race interview Stewart had a few choice words for Logano. Logano may have a target on his back at the next race between Hamlin and Stewart. They are off next week for the Easter Holiday so it will be two weeks before we get to see how the whole Logano-Hamlin and Logano-Stewart feuds play out.

Sunday Night Extra

At my work once a month they do a newsletter for our department and one of the features is ten questions spotlighting two or three of the employees in our department so we can get to know them better.  That made me think that maybe that would be fun so my readers can get to know me a little better.   So here it is ten questions with me…


1. Favorite movie?  “Gone With The Wind” and “Seven Brides For Seven Brothers”

2. If you had a superpower what world it be? The power to heal.  I have watched too many people I love suffer.

3. If you won the lottery, what’s the first thing you would do?  Take my favorite four-year old to Disney World and go back to school to get my Master’s

4. If you had the chance to trade places with someone for a day, who would it be? Rick Hendrick, I would love to know what it is like to own a race team plus I could spend the day with Dale Jr. and Jimmie Johnson

5. Name one pet peeve that you have. Baby Jesus in the crib before Christmas Eve at Midnight

6. If you could visit one place where would it be? Bristol Motor Speedway for the night race in August

7. What’s the best part of your job? The people I work with

8. Name one person (living or deceased) that you wish you could meet (or could have met)? My grandpa (my dad’s dad) he died when my Dad was 16 so I never got the chance to meet him.

9. Who or what inspires you? My aunt that passed away way too young

10. What is the best advice that you have ever been given? Hard work pays off

Southern Belle Reads Friday: What I’m Reading Now

Well I finally finished “Anything He Wants” by Sara Fawkes.  It was a good book but I was a little disappointed how it ended.  I know another part has been released now.  I have now started reading “Hatteras Girl” by Alice J Wisler.  I think I might really like this book because it has one of my favorite things in it, The Outer Banks.  I would move to the Outer Banks if I could, there is no place like it.  Next week I will provide you with an update on where I stand on my 55 books in 2013 stands since it is the end of the first quarter.  Untill next week keep on reading!

Southern Belle Cooks Wednesday: What’s Cooking This Week

I know this is going to sound weird but this week for lunch I made “Open Faced Hanky Panky Sandwiches”.  Laugh if you want but they are good.


Here is what I used…


2 Rolls Reduced Fat Pork Sausage

2 Blocks Sharp Cheddar Cheese

Fat Free Half & Half

1/2 Teaspoon Crushed Red Pepper Flakes

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Oregano


I browned the sausage and drained the fat.  Then I melted the cheese with a little bit of the half and half.  Once the cheese was melted I mixed everything together.  To serve I take a multi-grain flat round sandwich bread, lay the two halves out, cover them with the hanky panky mixture, and enjoy.


Southern Belle NASCAR Monday: Bristol First For Kahne

Sunday afternoon in the hills of Tennessee there was a first Bristol win, a fourth top ten in a row, a fight, and another win for Hendrick Motorsports.  Kasey Kahne got his first Bristol victory holding off Kyle Busch.  If Busch won that would have been his second of the weekend, he won on Saturday afternoon as well.  Dale Earnhardt Jr finished in the top ten, that makes his fourth in a row.  Looks like somebody is having a good start.  Joey Logano and Denny Hamlin are teammates no more, with Lagano moving to a new team this year, and after the race that was apparent to all.  Logano went after Hamlin, Logano blames Hamlin for causing him to crash.  Sunday’s victory for Kahne means that in this young season of four races Hendrick Motorsports already has two victories.  They are on their way to 300.  Johnson had tire problems and finished in the top 25, which caused him to lose the points lead, and Danica Patrick finished in the top 30.

Well I am still reading “Anything He Wants”. I have less than a hundred pages so I am getting there slow but sure. I feel like my reading slum is on the verge of being over though, or at least I hope it is. I have so many great books waiting on me to decide to pick them up. I don’t know what has gotten in to me lately.

Southern Belle Cooks Wednesday: Birthdays Times 2

This week two of the ladies at work have a Birthday so today was “food day”.  Since there were two birthdays and two different tastes I made two things and took them in.  I made a Carmel Tres Leches Cake and Almond Cheesecake Bars.  The Tres Leches Cake recipe I got off of Duncan Hines’ website and the Cheesecake Bars recipe I got off of Taste of Home’s website.   The people at work loved them!  Personally I thought the cheesecake bars could have used a little more almond taste and I think some raspberry flavor of some kind could have helped too.  I was hoping the caramel iced tres leches cake would taste like a bull’s-eye candy.  Since I am not a big fan of caramel myself I don’t really have a thought on how it tasted or what it needed.  It was really nice to bake two things last night to take in today.  I love baking, I find it my stress reliever and I haven’t taken the time to really do it in a while now.  It felt good, I miss it and I should make more time for my baking.

NASCAR Monday: Birthday Present For Kenseth

Yesterday under the Vegas sun Matt Kenseth gave himself a Birthday Gift and first win under new car owner Joe Gibbs.  Kahne put a last lap charge up but came up short.  Johnson finished sixth which means he maintains the points lead that he has had since Daytona 2 weeks ago.  Danica struggled all race and finished thirty-third.  Next week Bristol.
